Mango salsa complements numerous dishes, and it is a refreshing treat. My favorite mango salsa dish is fish tacos. This fruity take on salsa pairs perfectly with baked white fish folded inside a soft tortilla with cabbage slaw and a sprinkle of freshly grated cheese on top.
Mango salsa also makes a nice garnish atop baked salmon served with a side of steamed vegetables. Not feeling like fish? Serve this salsa with wholegrain tortilla chips or baked pita bread as an appetizer or as an accompaniment for Taco Tuesday.
The possibilities are endless. Not only is this salsa a fresh take on an old favorite, but it also can be prepared quickly, and it is healthy. As the weather warms up, this is a great salsa to bring along to picnics or BBQ gatherings.
Mango Salsa
1 mango, peeled, pitted and diced
½ red onion, finely chopped
1 jalapeno pepper, minced, include seeds for more kick
1 orange bell pepper, diced
1 tablespoon apple cider vinegar
2 tablespoons fresh lime juice
1 tablespoon fresh parsley, chopped
2 tablespoons fresh cilantro, chopped
Pinch of fine sea salt
Pinch of black pepper
Combine all ingredients in a serving bowl and mix well. Refrigerate until ready to serve.
