Zucchini bread is a scrumptious way to utilize zucchini from the garden. It is a moist, delicious bread that can be enjoyed any time of the day.
From breakfast to brunch to dessert, zucchini bread is a great choice. Add some honey butter to really elevate this delicious bread to a decadent treat.
If you find yourself with an abundance of zucchini, then consider adding this recipe to your stack and baking a few batches. Freeze the extra batches and thaw when ready to enjoy.
Zucchini Bread
2 ¼ cups all-purpose flour
2 cups grated zucchini
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon
2 eggs
¾ cup vegetable oil
½ cup white sugar
½ cup brown sugar
2 teaspoons vanilla extract
EVOO spray
Foil
Crumb nut topping:
1 tablespoon brown sugar
2 teaspoons ground cinnamon
2 tablespoons almond slivers
1 tablespoon glazed pecans
Preheat oven to 350 degrees.
Spray a bread loaf pan with EVOO and set aside. In a large mixing bowl combine the flour, salt, baking soda, baking powder and cinnamon.
In another large mixing bowl, beat together the eggs, oil, white sugar, brown sugar and vanilla extract.
Slowly add flour mixture to the wet ingredients. Stir in zucchini until well combined. Pour into prepared loaf pan.
In a small mixing bowl, combine all of the ingredients for the crumb nut topping. Evenly sprinkle topping over zucchini bread batter.
Cover with foil and bake for one hour or until a toothpick inserted in the center comes out clean. Remove foil the last 15-20 minutes of baking. Allow bread to cool for about 20 minutes prior to removing from pan and serving.

This is perfect. My mother used to make this every week when we were kids and send it to school in out lunch bag with real butter on it! Never got to the peanut butter and jelly , it was such a huge slice. A lot of memories your recipes bring back. Thank you for all of you do!
