Despite my age, I still like to think I’m “hip” and in touch with the younger generation. But am I the only one that had never heard of “mashed up” being used to refer to combining two or more things to highlight qualities of each into one?
If music and movies can be “mashed up,” why cannot popular recipes? Cooks have been combining ingredients and foods for centuries; however, to reach the younger generation, I am calling these creations food mash-ups from here on out.
For those of you who don’t like seafood, particularly oysters, I’ve taken the delicious flavors of oysters Rockefeller and mashed them up with breaded chicken breast.
Here is my “mashed up” take on a classic. Enjoy!
INGREDIENTS
Chicken Breast 4 ea.
Salt & Pepper as needed
AP Flour as needed
Egg, beaten 4 ea.
Panko Breadcrumbs 2 c.
Parsley, minced ½ bunch
Lemon Zest 1 T.
Lemon juice fresh 2 oz.
Olive oil as needed
Bacon, diced ½ pound
Onion, small dice 1 each
Garlic, minced 2 tsp.
Baby Spinach 10 oz.
Tomato, diced 1 ea.
Heavy Cream 1 C.
Scallions ½ bunch
METHOD
Preheat oven to 350 degrees F.
Combine the lemon zest and ½ the parsley with the breadcrumbs. Mix the lemon juice with the eggs. Season chicken breast S & P.
Dredge the chicken in flour, then the egg mixture, and cover the breadcrumbs.
Heat about 2 oz. of olive oil in a pan over medium heat and cook each breast until golden brown on both sides. Finish the chicken in the oven until the chicken reaches an internal temperature of 165 degrees.
While the chicken finishes cooking in the oven, brown the bacon in the same pan used for chicken, remove bacon, and reserve for later.
In the grease left from bacon, sauté your onions and garlic until onions are translucent.
Add your spinach and cook until wilted. Season with salt and pepper.
Add the bacon back to the mixture; add the heavy cream and cook until it has reduced by half.
Top each chicken breast with an equal spinach mixture and garnish with the tomatoes and scallions.
