With warm weather upon us, refreshing salads make the perfect side dish. Caprese salad is wonderful served with pasta, grilled chicken breasts, or charcuterie and cheese boards.
Caprese salad is a simple, yet scrumptious and nutritious dish made by compiling sliced tomatoes, fresh mozzarella, and sweet basil. There are many variations when it comes to preparing and serving Caprese salad.
I prefer to layer my Caprese salad atop a leaf of buttercrunch lettuce. A pinch of salt and pepper, then a little drizzle of olive oil and balsamic reduction complete my Caprese salad variation.

Caprese Salad (makes 10 salads)
10 buttercrunch lettuce leaves
10 slices of tomato
10 slices of fresh mozzarella, ¼ inch thick
10 fresh sweet basil leaves
Salt
Pepper
Olive oil
Balsamic reduction
Place the buttercrunch lettuce leaves on a serving platter, you may need more than 1 platter. Next, place the tomatoes atop the lettuce, then add a slice of the mozzarella on each tomato.
Sprinkle a pinch of salt and pepper evenly over the first compiled layers. Now, place a basil leaf on each slice of mozzarella. Drizzle olive oil lightly over the salads, then do the same with balsamic reduction.
The balsamic reduction can be made at home on the stove or be purchased at the store. Keep salads in the refrigerator until ready to serve.
