Chicken and Waffle Bites are a sure way to add fun to any occasion. Serve them at your next family reunion, graduation party, or cookout! They are such fun but worth the effort. If you have a good helper and some good music to listen to, it will seem like no time has passed at all. Enjoy!
Toss together the chicken pieces and the first measure of salt, pepper, paprika, oregano, sage, cayenne, and buttermilk. Store in an airtight container in the refrigerator for up to 1 day.
Place oil in a Dutch oven and heat to 350 degrees. Mix up the seasoned flour and coat the chicken; set aside on a clean plate.
In a separate bowl, whisk together the eggs and water to make an egg wash. Dip the coated chicken in the egg wash and then dredge it in the seasoned flour. Repeat until all the chicken is coated.
Fry the chicken in small batches for 3-4 minutes until the chicken is a nice golden brown. Drain the chicken on a paper towel-covered plate — preheat the oven to 350 degrees.
Place an oven-safe wire rack over a half sheet pan. Finish baking the chicken by placing it on the rack and bake for 10 minutes or until the internal temperature reaches 165 degrees.
Waffles
Whisk together the flour, baking powder, baking soda, sugar, and salt in a large bowl.
Add the sourdough starter, milk, egg, and oil. Mix well just until combined.
Spray a pancake skillet with cooking spray or grease well with butter. Heat to about 300- 350 degrees.
Pour 2-3 T of the waffle batter on the hot 4-inch waffle iron. Cook for 2-3 minutes until the waffle is golden brown. Allow the waffles to cool and store in an airtight container.
Before assembling the chicken and waffle skewers, preheat the oven to 350 degrees. Lay the waffles out on a half sheet pan and warm in the oven for 5 minutes; flip the waffles and continue heating for 5 minutes.
Sriracha Honey
In a medium saucepan, whisk together all ingredients. Place the saucepan over medium-high heat and bring to a boil, then reduce to low heat and cook for about 10 minutes, occasionally stirring. Remove from heat; Allow to cool.
Assembly
Take a 4-inch bamboo skewer or something similar and thread a bite of chicken followed by a waffle. Arrange on a platter and serve warm with sriracha honey and syrup.
